Mexico (#3) is recognized for having a medium body, light to medium acidity, sweet, a hint of dark chocolate, balanced. This batch is organic SHG. SHG means High Altitude Coffee . When you see these terms, it means that the coffee was grown at high altitude, usually over 1,200 metres above sea level.

HARVEST MONTHS: December to April This coffee is a regional blend from various smallholder farmers in Chiapas and milled in Perote, Veracruz. Chiapas is the Southernmost coffee growing region in Mexico. It boasts an ideal climate and altitude to create perfect conditions for mild, sweet coffee.

CUPPING NOTES: Bright Acidity, Medium Body, Grapefruit, Chocolate, Vanilla.

We roast on a scale from 1 - 10 so #3 denotes a medium batch.
